Zero-Proof Pairing

Pairing programs for guests who aren’t drinking.

A complete zero-proof pairing for your tasting menu — menu map, recipe specs, sourcing, staff training, COGS, and clinical 0.0%/<0.5% ABV labeling. Designed by a credentialed clinical taste-maker, delivered in 14 days, with a 60-day attach-rate guarantee.

Currently piloting 5 Austin tasting menus — capped at one program per zip code.

The category gap

30–40% of your tasting-menu guests aren’t drinking tonight. Right now they get sparkling water with a lemon twist.

Pregnant

No safe ABV threshold — the 0.0% vs <0.5% distinction matters and most kitchens are guessing.

Rx-sensitive

SSRIs, MAOIs, metronidazole, disulfiram — even trace ABV interacts.

Choosing not to

Sober-curious, recovery, observant, in training, or simply tired of wine. The fastest-growing segment in fine dining.

Wine pairing converts at 30–45% attach for $85–$165 incremental per cover. Zero-proof pairing, done right, converts 20–30% at $45–$75. That math has been sitting unclaimed on every tasting menu in America.

The program

Not a juice. Not a bottle. A complete pairing program.

We deliver the artifact set your tasting menu needs to ship a profitable zero-proof pairing alongside the wine pairing — in 14 days, with a measurable outcome.

A single course

Verjus & smoked yuzu, fennel pollen, finger lime.

A barrel-aged white verjus reduced with smoked yuzu zest, balanced with a single drop of fennel-pollen tincture. Served at 50°F in a 60ml low-stemmed glass alongside the seared scallop course. Verified 0.0% ABV. Holds at service temperature for 5 hours with no oxidation.

Founders

Christina & Andrew Templeton.

Christina Templeton, NP — Pediatric Craniofacial Surgery Nurse Practitioner with 10+ years of clinical practice. She is the taste-maker, the clinical authority on pregnancy and Rx interactions, and the person who signs off on every 0.0% labeled pairing.

Andrew Templeton — CTO and operator at a $1B+ PE-backed retail holding company. He builds the ops and automation backbone — sourcing, COGS modeling, attach-rate measurement — that lets the program scale across multiple partner restaurants without rebuilding from scratch.

We’re Austin-based. We started this because we kept watching guests at our own table get sparkling water with a lemon twist when they deserved a thoughtful pairing. So we built the program we wanted to see.

The free clinical labeling audit

Start with a 30-minute audit. No pitch.

Christina will review your current zero-proof options against her clinical labeling protocol — which are verified 0.0% ABV, which are <0.5% (and not safe for pregnant / Rx-sensitive guests), and three substitutions you can make this week. You’ll get a one-page audit document signed by her. We’ll send a buildout proposal three days later only if you ask.

Tell us a little

We never share or sell your email. The audit is free; there's no obligation, no pitch during the call.
